La Peña - Nicaragua
Intense flavor of cinnamon, cocoa (brownie-like) and cereal. Pleasant, sweet acidity of honey with soft notes of vanilla and toasted bread crust. The complex finish with more cocoa and honey notes will truly excite the palate.

The altitude of the farm is between 1350 m and 1800 m above sea level with an average temperature of 20°C and rainfall of 1700mm per year, with a sandy lime loam. Luis Balladares bought this farm in 2010 The terrain is inclining, undulating, surrounded with beautiful mountains and crystal water springs, with a diverse flora and fauna that helps the sustainability and the equilibrium of the ecosystem. The farm is 300m2 in total, out of which coffee is produced on 60 m2 with the total production of the catuai, caturra, catimor and maracatu varieties. This specific coffee is a Micro Lot called "La Peña".

Honeying is done by removing the cherry from the seed (coffee) and and is left to dry in the sun with the sticky mucilage on. This diers from pulped natural as no water is used in this process.
