Why Ruby Suke? Ruby, for its deep, jewel-toned fruit intensity. Suke, a nod to the highland farms where these extraordinary cherries are grown and transformed through time-honoured techniques.

There’s something undeniably special about Yirgacheffe. Revered for its distinct, floral and fruit-driven profiles, the region produces coffees that feel almost otherworldly. Ruby Suke is no exception – it’s a deep, complex expression of this legendary terroir, enhanced by a meticulously controlled fermentation process.

Sourced from smallholder farmers in the highlands of Hafursa Waro and Haro, this coffee is processed at the Hafursa Waro Washing Station, an operation committed to sustainability, premium cherry selection, and quality-driven processing. Here, farmers cultivate heirloom varietals on small plots, often intercropped with staple crops like enset (false banana) to maintain soil health and biodiversity.

After selective handpicking, cherries undergo a two-week over-ripening period post-peak harvest, allowing for intensified sweetness and fruit complexity. This is followed by a controlled 40-day drying phase, drawing out an intricate spectrum of flavour that’s both rich and indulgent.


The result?

  • Espresso: Blackberry jam, hibiscus, and cocoa-coated dates (silky, sweet, and vibrant).
  • Long Black: A more expansive expression—nutmeg spice and a caramel-walnut finish round out the experience.
  • Flat White: Marshmallow, white Toblerone, cocoa & strawberry cream, cashew (a decadent, dessert-like delight).

This is a slow-crafted coffee that showcases the very best of Yirgacheffe’s terroir, amplified by a fermentation process that makes every sip a little more unforgettable.
