Processing:
The whole cherry is dried on raised beds. The natural lot we have purchased from Pearless Estate is a pure fruit bomb that we have included in the Bomu la Matunda category. Ferment forward, great intensity and tons of fruity flavours is what amazed us from this natural lot.
Sustainability:
After pulping the coffee cherries, the farm takes the remaining skins and turns them into fertiliser. This is mixed with cow manure and then spread throughout the farm.
