Why this coffee stands out
Now, natural process coffees from Ethiopia can be like a wild party, big fruit, maybe some pleasant florals, and a little bit of chaos if you’re not careful.
But this one? This one is the thoughtful guest who brings both the wine andthe playlist.
The result of a slow, controlled fermentation in sealed tanks, this Aricha is the product of curious minds and steady hands. Cherries were sealed for an extended anaerobic fermentation before being dried on raised beds in thin layers under the highland sun. That slow start gives the coffee time to develop clean, layered sweetness, a winey acidity, and subtle floral notes, without tipping into the overly funky or fermented territory that naturals sometimes lean into.
The backstory
Up in the misty highlands near Yirgacheffe town, a processing station we’ve long admired decided to take a leap. Instead of drying their ripe heirloom cherries straight out of harvest, they sealed them into fermentation tanks controlled, watched, and timed to near perfection.
Think of it as a deep breath before the dance.
Once the tanks were opened, the cherries were spread out in delicate layers on raised beds and carefully dried under the high-altitude sun. The payoff?
A sensory journey that opens with juicy white peach and ripe pear, layered beautifully with the tangy intrigue of tamarind.
It then lifts with ethereal hints of orange blossom, before wrapping up in a finish that’s all honeydew sweetness and sparkling starfruit.
Yeah, it’s got flair. But it’s also got poise.
